Today I am making Peanut Butter Cookies. They only require 4 ingredients. They are simple to make and delicious! Add them to your cookie exchange, people will love them. Just make sure no one on your list has a peanut allergy.

Of course, our first ingredient will be peanut butter. I have only used Jif and Skippy but feel free to try whatever brand you use.
I found this recipe years ago, maybe 15 to 20 years ago. My daughter was little at the time. This is the only peanut butter cookie I make.
We will be using sugar, egg, and Vanilla! What, no flour. That’s right, no flour. They are just as good without the flour. You need to try them today!
See, so simple. Easy Peasy.
Mix all of this together.
You can easily double or triple the recipe.

I take an ice cream scoop, like these.
I used both the small and the large depending on what I’m feeling that day.
Then just put the dough onto the baking pan. No need to grease it. Smash the dough down with the bottom of a glass.
I then take a fork and drag it through the cookie dough one way, then the opposite way to get a criss-cross effect.
Pop them in the oven for 10 to 15 minutes and you are done.
Easy.
Simple.
Fast.
Delicious.

- 1 cup granulated sugar
- 1 egg
- 1 tsp. vanilla
- granulated sugar as needed for top of cookie°
