I am here to tell you you need to try this recipe! Delicious! Once you get all the ingredients together it goes fast. So I would say this recipe is easy but time-consuming.
It took me years to finally cook shrimp. I was scared I would mess it up. I didn’t cook fish for that very reason but once I bit the bullet and said I could do this, it was easy! Very easy!
I buy the frozen raw shrimp at Walmart that are peeled, deveined and tail-off. Small, medium, or large all work. If your shrimp are frozen, thaw before using them.
So let’s get started.
This recipe is so similar to the Olive Gardens version if you use the white wine called for but I use Chicken broth and everyone raves about it! Either way, it is delicious.
I mix up the salt, pepper, and parsley and put it into a little dish.
I also melt butter and mix a little olive oil and garlic powder together and spread it onto the bread. It seasons the bread nicely. You could just use melted butter or just olive oil or leave it as is like the original recipe calls for.
Now I put everything in its own little dish. The seasonings I mentioned above, the onions, garlic, wine or chicken broth, shrimp, lemon juice, heavy cream, olives, tomatoes, and cheese. That way all I have to do is line the dishes up next to the pan in the order they need to go in. No guessing what goes in next.
I chop the onion pretty fine and the garlic goes through my garlic press.
I stir the shrimp around just until they are all pink. Don’t overcook them or they will turn out tough. Don’t want that!

This recipe is for one person so I usually double or triple it depending on how many people will be eating it!
Olive Garden Sicilian Scampi
Ingredients
- 2 Tbsp. Butter
- 1 Tbsp. Olive oil
- 1 tsp. Minced white onion
- 1 tsp. Minced garlic
- 1 Tbsp. White wine or Chicken broth
- 6 Medium Shrimp Everything removed
- 1 tsp. Lemon juice
- 1/2 tsp. Parsley
- Pinch of salt
- Pinch of pepper
- 1 Tbsp. Heavy cream
- 1 Tbsp. Sliced black olives
- 6 Slices of baguette bread
- 1 Roma tomato
- Grated parmesan cheese Amount desired
