Happy Tuesday Friends.
Today’s recipe is very simple. Mini meatloaves. You just mix all the ingredients together and slather some bbq sauce mixture on top and your good to go!
These little loaves have a ton of flavor and cook in half the time of a regular-sized meatloaf. I found this recipe at Soulfully Made. I changed the recipe a little and I will post how I made them down below. To see the original recipe, go to Soulfully Made.
Here is how I changed mine.
I used 4 ounces of the Sweet & Tangy Beijing Sauce because that is what I had on hand instead of the Chili sauce. I used 4 ounces instead of the original 6 because I didn’t know how spicy it would make the meatloaves. My husband can’t have really spicy food so I went with 4 oz. It was delicious and not spicy at all.
I already had bacon bits from my method here. I used about 6 slices because you can’t go wrong with more bacon.
I used seasoned panko breadcrumbs because that is what I had on hand.
You can use any seasoned salt, I had Johnny’s on hand.
I only used a pound and a half of ground beef and it made 8 huge balls.
I used honey mustard because I don’t use yellow mustard on anything. Honey mustard tastes great.
And last but not least, I used 1 cup of BBQ sauce. 1/2 cup went into the meatloaf mixture and half went on top of the loaves combined with brown sugar for the glaze.
The original calls for broiling the meatloaves at the end but I have made them where I broil them and this time I did not. I don’t think you need to do the broiling step. It’s your preference!
Tip: Don’t overmix. Mix just until everything is incorporated and you will have a fall apart mini meatloaf.

Mini BBQ Bacon Cheddar Meatloaf
Ingredients
- 1 1/2 lbs. ground beef I used 80/20
- 4 oz. sweet & tangy Beijing sauce original recipe called for chili sauce
- 6 slices bacon cooked & crumbled
- 1 1/2 cups shredded sharp cheddar cheese
- 1/2 cup panko breadcrumbs I used seasoned
- 2 large eggs beaten
- 1 tsp. onion powder
- 1 tsp. seasoned salt I used Johnny's
- 1 tsp. garlic powder
- 2 Tbsp. Worcestershire sauce
- 1 tsp. Beaver's honey mustard original recipe called for yellow mustard
- 1 cup prepared BBQ sauce Sweet Baby Ray's
- 1/3 cup brown sugar
