Peanut Butter Cookies
An easy peanut butter cookie with the famous criss-cross pattern. No flour required.
- 1 cup peanut butter
- 1 cup granulated sugar
- 1 egg
- 1 tsp. vanilla
- granulated sugar as needed for top of cookie°
Preheat your oven to 325 degrees F. Place your rack in the middle of the oven.
In a medium bowl, mix the peanut butter, sugar, egg and vanilla until well combined. Spoon 1 tablespoon of the mixture about 1 inch apart onto an ungreased baking sheet or you can use an ice cream scoop (small or large). Flatten the mounds with the bottom of a glass that has been dipped in sugar. Make a criss-cross pattern on the cookies with the tines of a fork. You can sprinkle more sugar on top of the cookies or coarse salt. Either is great!
Bake until golden around the edges, anywhere from 10 - 15 minutes, depending on how soft or hard you want them. Repeat with the remaining dough.
