Olive Garden Sicilian Scampi

Ingredients
  

  • 2 Tbsp. Butter
  • 1 Tbsp. Olive oil
  • 1 tsp. Minced white onion
  • 1 tsp. Minced garlic
  • 1 Tbsp. White wine or Chicken broth
  • 6 Medium Shrimp Everything removed
  • 1 tsp. Lemon juice
  • 1/2 tsp. Parsley
  • Pinch of salt
  • Pinch of pepper
  • 1 Tbsp. Heavy cream
  • 1 Tbsp. Sliced black olives
  • 6 Slices of baguette bread
  • 1 Roma tomato
  • Grated parmesan cheese Amount desired

Notes

In a small bowl, mix together parsley, salt, and pepper. Set aside. Set oven to broil. Slice your bread into 1/2"-3/4" thick slices. Toast your bread until lightly browned on each side. Arrange the bread in a spoke-like pattern on a plate.  
In a skillet over medium heat, melt butter with olive oil. Saute' the onions in the butter mixture. When the onions are translucent, add garlic and saute' for about a minute, being careful not to burn the garlic. Add wine to the pan, followed by the shrimp, lemon juice, and spices you have set aside. 
Toss shrimp gently while cooking. Cook shrimp for approximately 1-2 minutes or until they turn pink. When the shrimp are cooked, add cream and olives. Cook to just heat the cream and olives, 15 to 20 seconds. Using tongs, place the shrimp on each bread slice. Pour the sauce from the pan over the shrimp. Sprinkle with chopped tomatoes and grated parmesan cheese.
