Mini BBQ Bacon Cheddar Meatloaf

Individual mini loaves made with BBQ sauce, bacon, and cheddar cheese that cook in half the time.

Ingredients
  

  • 1 1/2 lbs. ground beef I used 80/20
  • 4 oz. sweet & tangy Beijing sauce original recipe called for chili sauce
  • 6 slices bacon cooked & crumbled
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1/2 cup panko breadcrumbs I used seasoned
  • 2 large eggs beaten
  • 1 tsp. onion powder
  • 1 tsp. seasoned salt I used Johnny's
  • 1 tsp. garlic powder
  • 2 Tbsp. Worcestershire sauce
  • 1 tsp. Beaver's honey mustard original recipe called for yellow mustard
  • 1 cup prepared BBQ sauce Sweet Baby Ray's
  • 1/3 cup brown sugar

Notes

Preheat oven to 425 degrees.
Cook and crumble bacon.
In a mixing bowl, mix together all meatloaf ingredients except 1/2 cup BBQ sauce and brown sugar.
Divide the mixture into 8 rounds. Press a small depression into the middle of the meatloaves.
Mix the remaining 1/2 cup BBQ sauce and 1/3 cup brown sugar together.
Brush the BBQ sauce/brown sugar mixture on top of the meatloaves.
Bake for 25 minutes. 
Let rest 5 minutes before serving.
